For our range of fermented pickles, we use the same crisp vegetables that we use for our vinegar-based pickles. Fermented with local sea-salt (no vinegar) on the day of harvest. Fermentation creates health beneficial probiotic bacteria, which is very sensitive to heat. To ensure that all probiotics and nutrients survive in the jar, we do not pasteurize any of our products. They should therefore be kept refrigerated before and after opening.
